Pesto “Alfredo” Pizza Sauce
2 tablespoon lowfat cream cheese 
1 tablespoon goat cheese
dash of olive oil
pinch of salt
1 sprig of mint
1 garlic clove
1/3 cup milk
2 handfuls cashews
1 cup salad mix

Taste comments: This was my attempt at a creative pizza sauce since we were out of tomatoes and just using up items I had in the fridge while I made a homemade pizza. It shockingly turned out really good. I would totally make this again though I would even add tomatoe if I had any available. Really fun pizza sauce, light and refreshing with a touch of creaminess from the cheese.

Ice Cream First Attempt

Realized one of my drafts from this past summer I never hit the publish button. Better late than never...This shows the progression of learning how to use the Vitamix!

Ice Cream
1 cup milk
1 teaspoon vanilla
2 cup ice cubes

Taste comments: Use more ice. The ratio was off and the ice cream began melting very quickly. Turned into more of a drinkable ice cream...which was delicious...

leftover salad mix (handful)
1 large carrot
1 cup raspberries frozen

Taste comments: best to follow the advice of the order in which you add items to the blender. This was barely drinkable even though I knew it was really healthy via ingredients, the texture was grainy and bad. Next time add more liquid to help with the blending. The consistency of the blend is dependent upon the order in which items are added to the Vitamix. It is fun to play around with the machine to create new recipes.

Dark Chocolate Pistachio Almond Flour Cookies

These tasty treats have the antioxidant powers of dark chocolate with the healthy fats of pistachio nuts. Made with almond flour for extra nourishment.

I modified a recipe that I found on pinterest: Dark Chocolate Chunk, Pistachio, and Sea Salt Cookies | Two Peas & Their Pod

My changes
3/4 cup flour
3/4 cup almond flour from Trader Joes

I didn't sprinkle salt on cookies afterward as wasn't necessary I felt.

As I don't have a mixer I had to use my hands to beat the mixture in a bowl with a spoon which did result in a grainier texture.

I halved the chocolate and did half a cup of dark chocolate as I wanted the focus to be pistachio. Next time may even do a full cup of them.

My first tray used tablespoon sized balls on an olive oil sprayed tray. I did 10 min at 350 and unfortunately that was too long for our taste. While they didn't burn they became fairly hard and of a drier consistency. Batch two I made spoonful sized again on an olive oil sprayed tray. I initially did 8 min yet because of the size of these cookies being larger they needed the extra 2 min. These turned out just right. The almond flour did cause the cookies to crumble more than usual cookies might but we found it still delicious as they melted in our mouths.
